This codex should above all prove that pasta forms a culinary universe of its own. Pasta works with any plant or meat and in innumerable combinations. There are still pairings and gastronomic fancies waiting to be explored.
I recently received a copy of Vincenzo Buonassisi’s Pasta Codex. This category will attempt to document most of those recipes.
This may take some time.
Some recipes will not be attempted, either because the ingredients are unobtainable (I have no idea where I would buy camel) or because the recipe does not appeal (contains brain).
Some recipes may be scaled down. For some recipes I may use a different type of pasta to the recommended one.
