142. Rigatoni with Ricotta and Tomato
Short pasta tossed with tomato and ricotta.
As ever, the tomato gives it a lift.
As ever, I struggled to get much of a sauce out of the tomato strips.
Funnily enough, I read something today suggesting some tomatoes have large, bitter seeds, and that may be why these recipes call for tomatoes to be de-seeded. It might be worth not doing that next time.
